CiboDivino and Chef Ryan Olmos welcome local brewery, Pegasus City Brewery, for a 5-course dinner. Pegasus City Brewery has been brewing in Dallas since 2011, making a variety of craft beers, which reward their customers with perfectly balanced flavor, body, and finish.

Our beer dinner menu will consist of modern gastronomy, classic Koji-based fermentation, and local farm ingredients. As an added bonus, this menu will give you a taste of our recently launched, Artisan Meat Program.

Joining us from Pegasus City Brewery to present their line up of craft beers, including some limited releases: Will Cotten, Brewmaster & Co-Founder, Adrian Cotten, Creative Director & Co-Founder, and Joel Sharick, Steward of Smiles.

Guests will experience 5-courses, each expertly paired with the following brews:

- Beaming Blonde | Belgian Blonde

- Great hall Hefe | Hefeweizen

- Big “D” Jamboree | Fest Beer

- 19 Block | Bock

- Sixth Floor | Easy Porter

Fall marks the short season of Italy’s culinary treasure, the truffle from Northern Italy.

Experience the delicacy with Chef Puleo’s 4 Course menu, expertly paired with Michele Chiarlo portfolio wines.

The intimate wine dinner event will be the opening of our new full service and reservation only patio - CiboDivino Trattoria.

As part of the special celebration, each couple will take home a bottle of Chiarlo Barolo. The evening begins with a presentation about Chiarlo and Barolo, led by co-host, Emiliano Monchiero. The brand ambassador leads a conversation about Italy’s famed Piemonte region and the traditions of one of the most prestigious winemaking regions in the world.

Following the wine presentation, guests will experience a traditional Piemonte menu paired with the following estate wines:

- 2019 Michele Chiarlo Gavi

- 2018 Michele Chiarlo Nebbiolo "Il Principe"

- 2015 Michele Chiarlo Barolo "Tortoniano"

- 2019 Michele Chiarlo Moscato D'Asti "Nivole"

The event is Saturday, October 17th, starting at 6:30 pm with dinner at 7:00 pm. Tickets are $85 per person. Due to social distancing, seating is limited.

More About Emiliano Monchiero:

Born in Torino in the northwest part of Italy, Emiliano has represented notable wineries around the world. He currently manages the Italian portfolio for Kobrand and serves as the Italian Wine Specialist for more than 13 states. Monchiero is passionate about Italian wines and has advanced certifications from the Court of Master Sommelier and his WSET Level 3 certification with distinction. In his spare time, he enjoys time with his family and racing cars with his friends from the Ferrari Club of America.

This demo is a celebration of Sicily. From the main course to the wines, the flavors will leave you dreaming of Italy! Pasta al Forno, or baked pasta, is a dish that originates from Sicily's capital city of Palermo. It is a genuine family recipe typically enjoyed during the holidays but can also serve as a hearty, mid-week meal.

Our version stays true to its roots using anelletti, a ring-shaped pasta, that can prove hard to find in the U.S. The anelletti bakes between layers of ragù sauce, béchamel, meat, and a variety of cheeses. To complete the experience, add-on our side dish Rollatine di Melanzane (rolled eggplants) and a bottle of wine.
